Crispy Potato Nachos
Happy Sunday wanderers and welcome back to another post! Today I am going to be sharing with you an easy recipe for potato nachos!
Firstly, you are going to want to make some oven roasted potato cubes! Dice potatoes into bite size cubes and coat them in olive oil and some salt. Bake on 425°F for 25-35 minutes or until golden brown and crispy on the outside. You can choose to melt your desired vegan cheese over your potatoes in the oven or you can use the microwave after. If you use the oven, add the cheese just before they are done cooking.
Once your potatoes are finished, transfer them to your desired serving plate or bowl. From here add your toppings that you want to be warmed up. I sprinkled on some black beans, Daiya pepper jack cheese shreds, and dollops of vegan nacho dip. Then, I microwaved mine for about 1.5 minutes until the cheese was melted.
Lastly, add the cold toppings. I used half a sliced avocado, Tostitos salsa, and vegan sour cream. That’s it! A super simple and easy recipe!
I have included the specialty vegan products I used below. They were all easily accessible at my local Stop & Shop in the United States.
