Hot chocolate bombs have taken the internet by storm, so of course, I needed to make some vegan ones!

Shopping Tips
Silicone baking molds can be found at your local craft store. I picked up these floral ones from Michael’s. While I was there I also picked up Wilton food coloring spray, which I verified is vegan using my “Is it vegan?” app. This app allows you to scan barcodes right in the store! This is going to add a beautiful decorative element to the hot chocolate bombs without the need for sprinkles. For my melting chocolate I picked up Enjoy Life semi-sweet chocolate chunks from Whole Foods. At Whole Foods I also bought Lake Champlain traditional hot chocolate. For vegan marshmallows, check your local Trader Joes, or a health food store near you may carry the Dandies brand. “Traditional” marshmallows can contain gelatin, which vegans avoid. Vegan Baileys can be easily located at most liquor stores. The only other thing you need is the plant milk of your choice.
Instructions
Melt your chocolate over a double boiler. Spread your melted chocolate into your molds. Try to coat all of the sides of your molds evenly. Once the molds have a thick and even coating of chocolate, set them in the freezer of fridge to harden. Once they have hardened you can portion your hot chocolate mix and vegan marshmallows into your molds.
Option A (easy):
Portion your hot chocolate and marshmallows into all of the molds. Fill the remainder of the mold with chocolate to seal them off.
Option B (advanced):
Once they are completely hardened, pop all of your molds out of the silicon. Portion your hot chocolate and marshmallows into half of the molds. Using left over melted chocolate, fuse a full mold and a hollow mold together to seal your chocolate bomb. This option will create a larger and more impressive chocolate bomb with more of a hollowness to the inside.
Whichever option you chose, place your hot coco bombs in the fridge once again to completely harden. Word to the wise, be patient. Leave them in the fridge or freezer overnight if you can. You don’t want to risk your hot coco to crumble out of the sides. Once the chocolate is completely hardened you can demold your hot coco bombs from he silicone. Finally, you can finish off your chocolates with your glittery gold food coloring spray. Alternatively, if you want to decorate them with sprinkles, add sprinkles to your molds as the first step before the chocolate.
Now that you have made delicious vegan hot chocolate bombs, you are well on your way to an incredible boozy vegan hot coco. Add you Baileys Almande and your hot chocolate bomb to a glass or mug of your choice. Warm up your plant milk over a medium heat, you want it go get hot without boiling. You could even use a milk frother if you have one to make it extra fancy. Pour your warm milk over your hot chocolate bomb and watch as it melts and the marshmallows float to the top.
